Fermented (also known as aged) black garlic is the result of enzyme fermentation of organic garlic, which changes the colour from white to black.  Fermentation (aging) breaks down the active sulphur compounds found in garlic, making it easier to digest. The process creates a unique antioxidant, known as s-allyl-cysteine (SAC), which is only found in fermented black garlic.

What is black garlic?

Black Garlic is rich in essential minerals such as magnesium, calcium, phosphorus, selenium, and vitamins B6 and C. When raw white garlic is aged for thirty days at 70 °C in a controlled humid environment, it undergoes a Maillard reaction and fermentation, transforming into black garlic. This process not only offers delectably sweet umami flavors and aroma but also enhances its nutritional profile. During this process, a highly beneficial antioxidant, s-allyl-cysteine (SAC), is formed, amplifying the benefits of black garlic.  SAC is the key to reaping the benefits of black garlic. Without it, or with reduced amounts, you won't receive the optimal benefits.

Flavor and beneficial properties are retained in fermented black garlic by the low and slow freeze-drying process. The aging process creates higher levels of antioxidants than those found in raw garlic. This is partly because allicin, the compound that gives garlic its pungent odor, is converted into antioxidant compounds like alkaloids and flavonoids. 

Traditional garlic supplements lose their allicin content quickly because allicin starts to break down after exposure to air, which occurs when garlic is processed into a powder for pill making.

Can I open the capsules and use the powder in food recipes?

Yes, the capsules can be added to gravy, meat dishes for flavor, and vegetable recipes.

Suggested use: Take two to four capsules per day, with food and a large glass of water, or as directed by your healthcare practitioner. For sensitive individuals, it is best to start with just one capsule and gradually increase the dosage.
