Fermented (also known as aged) black garlic is the result of enzyme fermentation of organic garlic, which changes the colour from white to black. Fermentation (aging) breaks down the active sulphur compounds found in garlic, making it easier to digest. The process creates a unique antioxidant, known as s-allyl-cysteine (SAC), which is only found in fermented black garlic.

When raw white garlic is aged for thirty days at 70 °C in a controlled humid environment, it undergoes a Maillard reaction and fermentation, transforming into black garlic.
