This tallow is made from suet. Suet is the prized fat from around the kidneys and contains higher levels of the important fatty acids in tallow. Most tallow is from beef trimmings, which have lower levels of the good stuff found in tallow made from suet. However, tallow made from beef trimmings is much cheaper to make, so most companies go that route. Tallow made from suet, like this one, is very hard at room temperature, while tallow made from beef fat trimmings is very soft. Tallow from suet is the way to go if you want the benefits that tallow offers.

Grass fed and finished tallow made from suet contains:

• Stearic acid
• Oleic acid
• CLA (conjugated linolenic acid)
• Palmitoleic acid (omega-7)
• Palmitic acid
• Very low levels of omega-6, linoleic acid

It is a great replacement for vegetable and seed oils in cooking. Unlike vegetable oils that break down at high cooking temperatures and cause oxidative stress from free radicals, this tallow has a high smoke point (over 400 degrees Fahrenheit).

This tallow is dry rendered. This process involves melting the fat down slowly at a low temperature and clarifying it to remove any impurities and moisture. While wet rendering is a cheaper and faster process, it also results in a lower quality tallow. Removing the moisture and impurities will ensure a longer shelf life of the tallow.

Suggested use: Add ¼ teaspoon to a hot beverage for a silky, creamy texture, or take as directed by a healthcare professional.  Scoop a spoonful into your roasting or frying pan; the high melting point makes it absolutely perfect fat for deep frying and roasting.

Some of the farms are very small, so they have chosen not to get organic certification because of the cost, but all of the farms' practices exceed USDA organic standards. They source only premium quality restaurant-grade beef, fresh from their own butchers.

The cows only eat more than twenty-six varieties of grasses that grow wild in the Lake Eyre region. The cows are never given grains, hormones, antibiotics, MRNA vaccines, or Bovaer.
